Welcome to Nutrition Challenge 2007! This is a fun, interactive 10 week challenge designed by Registered Dietitians to help you improve your eating and exercise habits with a group of people!!! There will be weekly challenges and games to keep the competition interesting!

Italian Pasta Salad
2 cups uncooked whole wheat rotini
1 pkg spaghetti sauce mix
½ c boiling water
1 cup Italian salad dressing
4 cups cooked vegetables—broccoli, green beans, peas, red potatoes, carrots, zucchini, etc.
Cook pasta with 1 tsp salt. Blend spaghetti sauce mix with boiling water and stir to dissolve, then allow to stand for 1 minute. Mix with Italian dressing. Drain pasta and mix with vegetables. Pour dressing over pasta/vegetables, stir and serve!
Serves 4.
