Week 5 Recipe

Simple Chicken and Rice Skillet

1/3 cup oil or vinegarette dressing
1 lb cubed chicken or tofu
2 tsp oregano
4 cups vegetables
1 can chicken or vegetable broth
2 cups uncooked brown rice

Heat dressing in skillet, add chicken and season with oregano. Simmer for 5 minutes, then add vegetables and broth and simmer 5 minutes more. Stir in rice, cover and simmer 5 minutes. Turn off heat and let stand, covered, for 5 minutes or until liquid is absorbed. Enjoy!

1 1/2 cup serving is 3 whole grain carbs, 1 meat, 1 vegetable and 1/2 fat.
