Welcome to Nutrition Challenge 2007! This is a fun, interactive 10 week challenge designed by Registered Dietitians to help you improve your eating and exercise habits with a group of people!!! There will be weekly challenges and games to keep the competition interesting!

Green Salad with Pineapple, Apple and Feta
Balsamic-Mustard Dressing
3 tablespoons balsamic vinegar
3 tablespoons water
2 tablespoons honey mustard
1 clove garlic
Salt and pepper to taste(optional)
Salad
6 cups green lettuce
1 1/2 cups pineapple chunks
2 medium Red Delicious apples
1 small red onion
3 tablespoons feta cheese
Whisk together vinegar, water, mustard and garlic. Chop/dice salad ingredients and mix well in large salad bowl. Add dressing and toss.
Makes 7 servings, 1 cup each. Each cup counts for 1 serving of vegetables!!!
