Spicy Pumpkin Pancakes
Welcome to Nutrition Challenge 2007! This is a fun, interactive 10 week challenge designed by Registered Dietitians to help you improve your eating and exercise habits with a group of people!!! There will be weekly challenges and games to keep the competition interesting!

Spicy Pumpkin Pancakes
2 1/3 cup Bisquick(try the whole wheat or heart smart variety)
1/3 cup canned pumpkin
1 1/4 cup milk
2 eggs
1/4 cup canola oil
2 tablespoons sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
Heat griddle to 375, or medium. Pour 1/4 cup batter on skillet, cook until edges are dry.
Serves 5
1 4inch pancake equals 1 carb.
